In general, the term doesn't mean anything specific. Better probes may be longer lasting, more accurate, or more easily calibrated, but anyone can call any probe lab grade.
I agree with Randy . pH probe companies do not have grades of probes. It is just cheap to expensive depending on the type of probe and its response curve
