OT: looking for King Fish Recipe

Anyone have one they are willing to share? I usually use them for bait or give them away. This time I kept one to try out. I was hoping it would be like Spanish or Cero Mackeral. But everyone says it's "fishy. "
 
i use lemon pepper and grill them, easy and good. where did you catch them?

In the Keys on the Gulfstream. Do you prepare the meat a certain way before cooking it. I've heard of people soaking it in Milk or salt water over night.
 
NO NO NO!! Please don't throw them away. Smoke the fish! I'll do it for you if you can't.

Here is what you can do...

* 2 cups flaked smoked kingfish without the skin. (make gallons if you can)
* 2 tablespoons fat-free mayonnaise
* 4 tablespoons fat-free sour cream
* 1 pinch Old Bay ™ Seasoning
* 4 drops hot pepper sauce, or to taste
* 3 drops Worcestershire sauce, or to taste
* cracked black pepper to taste

Now, I add a nice fat, and I mean F A T tablespoon or 3 of diced jalapenos into the mix and whatever else I want to. Some people use cream cheese. I like to add some lemon juice. Put it all in a blender or processor, zip zip and you've got a delicious blend for crackers. It may sound like work for cracker topping, but when it dissapears you'll be sorry it's gone.
 
soak them in a nice brine over night before cooking for added flavor. Especially if you smoke them.
 
I soak them in milk over night, then add garlic salt and lemon pepper. Grill skin side down until the flesh is flaking. Delicious!

But definitely soak them, takes away the strong taste.
 
If you have to soak it in milk or marinate it, throw it back next time. Catch/keep a species that tastes good. .02
 
we usually stew them.. it tastes awesome! it is definitely one of my favorite fish. its also how you clean them to get rid of that fishy taste

One of the best tips I can give you, is have a little noose hanging from your stern cleat, cut the gills, and bleed them before you ice them. 3 or 4 minutes is all it takes.
 
Cero Macs has a cleaner taste then Spanish or Kingfish. It is actually the better tasting fish compare to Spanish. All 3 fish by the way make great snapper and grouper bait. It also freeze well vacuum sealed. The key from fishy taste is to eat it fresh the same day. Bleed the fish when caught. Remove all blood line on the meat. Grilling and baking are my favorite. Smoking is great if you catch enough to make dip.

Any fish you have to soak in milk is a waste of time and milk. Save the milk for Oreo cookies.
