With a reef system, what all should I check for?

Ammonia
Nitrite
Nitrate
Phosphate
Ph
Calcium
salinty

I check all the above weekly.

Magnesium (?)

and I know there are a couple more. What else should I check for and why? Thanks

You'll want to check your magnesium & alkalinity as well.

After the tank has cycled, your probably find yourself just testing for salinity, calcium, magnesium & alkalinity on a regular basis though. Alkalinity being the most crucial IMO.

After a couple of months you can skip the ammonia, nitrites and possibly the nitrates unless you suspect a problem. I test for Salinity, Ca, Alk and Mg weekly, and phosphates once every two weeks.
