I've never done saltwater before and I'm thinking about it and doing research, and I have heard that you can't stock as heavily with saltwater as you can freshwater... What do you think would be a good stocking list for a 55 gal fowlr? What are the best fish in terms of easiness and not too expensive? Thanks

I'd seriously look into getting the tank drilled, and either buying or building a sump for it to house a refugium, which would help, and increase water volume.
In a 75 I'd do:
2- Clownfish
1- Yellow Watchman Goby
1- Sixline Wrasse
1- Flame Angel
1- Yellow Tang (Or a Bristletooth Tang, such as a Tomini or Kole)

I like that list but skip the tang, no tang will do well full life in a 55 gal. change the tang with 2-3 chromis and your set.
IMO I would use LR and a skimmer for your filtration and leave the emp. out except just to run carbon.

Oh I read wrong, so yeah, switch out the tang, and you're set.
