why do we use $ # % # &. what do they stand for?

They are for the AC3 controllers and map to the little icons that appear on the lower line of the display (the status line). There is a picture in the back of the manual for what each will be represented as on the display.

Yes, that is exactly what I was referring to as well. Look at the back pages of the manual; there is a table with what icon the characters represent.
