I got mine direct from a collector so I knew they were handled well, which I believe helped. When they arrived from Hawaii I drip acclimated them to quarantine tanks with lots of hiding places and low light. They stayed in quarantine until they were eating offered foods well and I was confident they were healthy.
The day after they arrived I started offering nori on a clip as well as small amounts of various foods numerous times each day, sometimes soaked in crushed garlic and/or Selcon. The first offered food that two of mine ate was frozen mysis shrimp. The third took to Cyclopeze soaked in Selcon first. That took about three and four days respectively, but they were picking at the algae on the glass from day one. They didn't start eating nori until after they were added to my display and saw the other fish doing it. They pretty much eat anything now.
I think it helps to have your quarantines up long enough to have a brown diatom bloom as all of the Centropyge that I have had over the years will pick these off the glass, usually before they eat anything else. These guys like to pick their food off of rocks and the bottom of the tank so often the first thing they eat after any available algae are the sinking pellet foods or pieces of food that have fallen to the bottom. Keep a close eye on water quality as they are fairly sensitive to changes/problems, especially at first.
You might want to look for one locally so you can see the fish eat before buying him/her. Healthy Potter's Angels are active swimmers and pretty much continually on the search for food that might be on most any hard surface in the tank. Don't buy one that is sitting in a corner, or that has a dull and listless look.
