carbon query?

Howdy. Will carbon release chemicals / metals back into the water once its used up all its absorption capability?

It shouldn't, at least not in any significant quantity. The tiny particles it removes get wedged into the tiny pourous openings on the carbon granules, so unless the carbon is being ground down in some way you should be safe.
