I left for vacation and now that I'm back my coral beauty has some serious fin rot on his rear fin. Any ideas on how to fix this?

"serious" fin rot? You can cure the bacteria but there is a chance it may not fully recover it's rear fin if it's too bad. Most of the time the fin grows back no problems unless it's too far into the tissue than he may have a stump for his life, which shouldn't effect him too badly in your tank. Also you are better off treating in QT as most anti-bacterial will kill both bad and good bacteria.
would i be able to use my five gallon as a small QT?

In most states a 10 g is like 10 bucks or so, There's quite a bit involved having a good QT. I couldn't imagine you having stable water in a 5g.
