How do you determine the amount of soft corals to place in a 65 gallon reef aquarium. Is there a method of determining or a guide to go by?

That depends, some of the corals have long sweeper tentacles that they use for feeding that can sting while some are far more aggressive than others and produce chemicals to ward off corals.

Do you have any corals in mind that you know you like or would want to keep?

+1 just make sure you have good flow and skimmer to take out those junk in the water.

i think its more or less how many spot ins your rock or sand bed you have that keep each coral a fair distance from the other. if you overcrowd you wont be able to relocate a coral if you have a problem

I have wall to wall soft corals in my 240.
There is no limit other than the need for each coral to be able to get enough exposure to light.
