Cycling question

I am a beginner reefer, I set up a 55 gal. tank with dry rock, and live sand, let the system run for about a week, then didn't do anything to it in 2 weeks (had to go away). Came back tested water everything read zero's, not sure if tank actually cycled with just live sand only (I'm thinking not), so I threw in 2 pieces of shrimp, which are almost fully decomposed right now, been testing the water, the ammonia only spiked up to about .75 and stayed there.This is week 5 now. Did a full test this morning and the nitrite rose to about 2, nitrate 20ppm, so my question is should I have a larger ammonia spike, or is the tank on its way to complete cycling?
 
Yes tank is cycling but wait until no trace of asmmonia or nitite is present and do a 20% water change. You didn't mention having any rock in there. Do you?
