Help me understand controllers!

I'm trying to find something that I can incorporate into my 90G build that I can keep track of all my parameters through my iPhone. What can I do about it?

I'd like to keep track of:
Temperature
Salinity
Nitrates
Calcium
Magnesium
pH


Basically everything. Do I have any cheapish options?
