My 45 Gallon Tank was cycled a couple weeks ago, and showed good levels on all tests for about 10 days before i added my CUC 5 days ago.

they have since been cleaning away, had a ton of brown algae, etc.

I have been noticing that a few of the rocks have turned completely white after they cleaned off the algae.

Is this die off? is that possible to happen after the tank is cycled?

here is some pics.

It's not die off. Your snails have done an excellent job at cleaning your rocks though. No worries.

Nope....just the diatoms coming off the rocks. A normal part of the cycle. Your CUC is doing its job.

I still have this slimy white on a couple of my live rocks. I still think this was die off prior to me transferring my love rocks into my tank 7 weeks ago... Still no fish in the DT. Nitrates at 15, ammonia 0, ph 8.2 , nitrites 0

I never see any algae growing on these areas nor any CUC go near it. Should I take the rocks out and scrub this white stuff off? The rest of my live Rock is getting good normal greens and purples.

Looks fine to me too... Just let the clean up crew continue their work... New tanks go through all sorts of strange phases and outbreaks of different things that come and go until the tank matures. I see nothing to worry about.

those are some nice looking rocks.
being honest though, I think you can improve the aquascape.
