Leftover neutral whites

This is kind of off topic.

I have some white stars leftover from previous builds that I'd like to use for a household application. The under counter florescent lighting in my kitchen buzzes pretty bad. I'd like to replace them with leds.

If I mounted the leds to c channel and screwed them to the bottom of the cabinets would this create a heat issue? I think two stars per 24" cabinet would be plenty. Also, would this easy enough to wire to a switch?
