1) It's a brilliant treatment. Yes its a bit of a PITA but brilliant. It really doesn't take much to successfully get rid of ich on fish. I also treated with Prazi pro and they all seem very happy and eating like champs.

I know I have to leave my display fish-less for a few weeks. How would you go about keeping them in QT?

Should I just run carbon and keep it as clean as possible? Weekly water changes? Should I dose anything else?

Just keep up with regular water changes and make sure you feed them good. It's kind of a PITA to keep fish in an unicycled tank, but it isn't hard as long as you keep up with regular water changes.
 
Monitor for ammonia and add Prime. Fallow period for ich is 72 days for greatest certainty but a minimum of six weeks is preferred (which is two time average life cycle duration)

And be sure the quarantine tank is at least 10 feet away, preferably in another room. Watch out for cross contamination too.
