Muds

Also, does the sand and mud mix together eventually? What if there are burrowing fish/inverts, will they mix it together (IE the mud on top)

Eventually it will all mix together through normal tank maintenance and the burrowing critter action. There was still a perceivable mud layer and a sand layer in my tank after one year however. Areas where the jawfish had built his tunnel had caches of larger fragments and shells deep in the bed.

I dont know what brand of mud is best, no one's tried to set up series of tanks to see how much it matters. I think no matter what you do to the substrate you are going to have to provide nutrients to the plants in the water column eventually. Either they will need more nutrition than the substrate can provide, or the substrate becomes exhausted after a period of time. It is a benefit to try to have a little wild bed material however, for the potential root associated microbes.
