Two pederson's shrimp I have.

This one was harder to take a pic of, he was swaying like crazy, this is the best I could do:

Tiny shrimp, crabs etc. are the funnest to shoot for me- I live for that stuff :p
This type of shot would be a good candidate for flash- using a flash will allow you to get a much sharper picture and more depth of field too. If you're willing to experiment a little, try manual exposure mode, f16 and 1/90 for a starting point and see how it looks. Be sure to aim the camera downward slightly to keep the reflection of the flash out of the shot.

yeah I always shoot in manual mode, though these guys were moving too fast. if I wanted better DOF it'd get too blurry =( I need to work on my flashes, but I always overexpose on the flash.

Also the acrylic isn't too clear if I'm not shooting straight on! It's 3/8" acrylic which might be the problem.

Unfortunately that is always the case- with acryllic or glass- even Starfire glass :(
Consult your manual (if you don't already know how) on how to apply negative flash compensation for when you use the flash- it's fairly common for cameras to overexpose in these kinds of situations but the important thing to learn is that you can control the output- either by flash exposure compensation [fec] or by intentionally underexposing the shot. I think you'll be very pleasantly surprised by how much depth of field you can get this way.
