Is the only difference between the Mega and the Ultimate controllers, the touchscreen? And if so is it possible to use an ipad or an android device to serve the same purpose?

This will help me decide which one to get.

You can use myGHL to turn off and adjust settings using a tablet. I have set up water change and feed modes in the GCC software.That allow one button control in myGHL.
The touch screen control is really nice and is something I plan on purchasing in the future.
So I don't have to dedicate a tablet just to control and display readings. Kind of a waste of a tablet in my view.

Yes but you can buy a simple tablet for a third the price of the touch screen. So not really a waste.
You can access the on board web page to also show details and change items, rather than go off site to something like myGHL.

thats why i was wondering. we have a Ipad mini and a samsung 8.4 tablet pro hanging around not being used.
