Quarrantine question

I had a pair of black A. polyumnus, and the male died when we moved back in November. I am getting ready to get a new little guy for her, but have a dilemna. If I put the new guy in quarrantine, don't I risk it beginning the change to female leaving it for 6-8 weeks alone? Do I take this chance? or since she is the only fish in the tank, do I take the risk and add the new fish directly to her tank?

That would be completely up to you. I am a firm believer in quarantine practices but IMO if it were my fish I would just add it directly to the tank.
