Sand bed deep

Depends on the goal. If just for aesthetics then any amount that will cover the bottom, for sand dwelling wrasses, 2-3 inches, for jawfish 5-6 inches and for a DSB for de nitrification then 6+ inches.
My sandbed is currently 1-2 inches but I will need to deepen it a bit as I'm looking for a sand dwelling wrasse to add soon.
 
Mine is about 2 inches, apparently deep enough for my spotted yellow pilot goby, and my flame fish to have a hidyhole under a section of the rock structure.

2-3 inches is within a good range. That will allow you to easily siphon and remove detritus material that builds up at the bottom. After a few years the sand can become toxic if you do not siphon or have enough invertebrates shifting the sand for you.
