Hey Sean,
I have a snowflake and he hides in a hole that he can barely fit in. I did some rock work on Saturday and he was inside that rock the entire time. I couldn't find him for quite some time and was afraid I trapped him inside. Then...I saw those yellow "snoot tubes" sticking out of that hole. Kinda glad he stayed in there though, I didn't want to get bit. Mine eats twice a day, mysis and brine. Now he has taken a liking to my brand new blue damsels. he will swim up to one and hover over it's head, open his mouth real big and try to strike. The fish is much bigger than he is but he sure thinks he can get a snack.
It's normal for them to hide. He probably comes out at night when you are sleeping. Turn off the hood light and wait a little while and see if he surfaces. I read that the eels don't need to eat but two or three times a week. Mine however eats twice a day.
Good Luck
