Here is the tank that I set up for my girlfriend's family.

I am really a beginner and just looking for some tips and critiquing.

Specifically though, with my Nikon D50, what settings to I need to make these pictures look better?

Like reduction in the blue hue in the hermit crab picture, overall clarity and color quality.
 
looks good the only thing I would say is maybe add more LR but maybe thats not what your grils family wants so maybe I am wrong but looks good
 
The first shot looks like you were shooting at an angle throught he glass which caused big time distortion. If not then you were moving!

Second is quite good. If you don't like the blue you can adjust the white balance on the camera or better yet shoot in RAW mode and then make it the temp. you want when converting it from raw in photoshop or the like.
