Stand question

The slow progress on the stand for the 75g is making some headway. I have to cut out a section of the top for the pipes to go through. Should I cut one big hole for both pipes to go through or individual holes. I can't imagine it would matter either way, but maybe there's a benefit I'm not aware of.

Depends on what part of the stand you are cutting them through but typically that is not going to make a difference one way or the other (ie. if you arent cutting them through support structues).

Just leave room for the bulkheads and to get a wrench in there should you need to tighten it.

I've never made a canopy, but a few things came to mind that I think I would consider if it were me doing it...

If you have no glass top, and there will be nothing between the water surface and the canopy, you will have a lot of moisture in the canopy....unless you have good ventilation. In that case, more holes with vent covers may be good...or maybe a fan, but that runs up electricity.
