Stocking list and Pairing

BAMs BAMs... I have a ton
I am looking for some thoughts on my stocking list.
I am setting up a Red Sea Max 250. It is a 65g total volume system, w/ approx. 55-60g display.
This is an upgrade so I will be moving the current inhabitants of my 130 red sea max over which are: Starry Blenny, two clowns, a perc and an osc, and a McCoster's Flasher.

Here is what i want to have in the 250 in addition to the 4 fish.
Pearly Jawfish
Coral Beauty (hopefully 2, see below)
Mandarin
Maybe some female McCosters
Also a tailspot blenny, maybe

I will get the pearly first, let him get used to his home and get a burrow rolling.
Then I will add the tailspot. I will let him get sorted and find good hiding areas.
Then I want to add a pair of coral beautys.
I am wondering how to pair them up. I know that Centropyges are femal juvis and turn to males, please correct me if I am wrong, if this is the case, are they as easy as clowns to pair? will they just figure it out if introduced at same time, with one being smaller than the other?

The other issue is the blennys, #1) will they get along together? #2) if I forget about the tailspot, will the starry still give the Pearly any issues since they have realtively same body type?
