Snail eggs
Your snails have been listening to Barry White, or Chef from South Park.

BTW, it's pretty much always a good sign when you see eggs. It shows that you're keeping your water quality solid enough that animals can reproduce. Snails are among the first to do it (hehe), but it's a still a husbandry victory for you.
