I haven't used the video feature much on this camera, but I took a couple this past weekend. Here is the first one of my orange spot goby:

So how does the video mode work on the SLR?

Can you change the aperture during the shoot? Do you have to set it once at the beginning then never change it again? Same with ISO, can you change that during the video sequence?

Manual focus only, right?

Cute I have the same kind of Goby. It always cracks me up how it starts filling in the opening to it's burrow a few minutes before my lights go out.

Focus is manual only. If you update to the latest 5dmarkii firmware, all of the same shooting modes as stills are available - but you are limited in terms of what exposure times you can use. I never shoot in anything other than manual for video.

Yeah, I am not sure about changing those things on the fly. I'll have to experiment. In the mean time, here's the cliche Xenia video I took as well:
