75 Gallons: Planning my fish livestock

So I went shopping this weekend. I got part of my cleanup crew (2 cleaner shrimps, 3 peppermint shrimps, 10 trochus snails, 2 emerald crabs) and 3 corals ("red people eater" paly, green star polyps, and yellow skirt clove polyps). I also moved my 2 clowns and royal gramma from their smaller tank into this one. Everyone seems content, but I haven't seen the 3 peppermint shrimps. I saw one hiding in the back since yesterday. Last night before I went to bed, I saw 3 of them. This afternoon, I think I saw two of them in that same spot. Tonight, only one. I can't seem to find the other two now.

I've never kept peppermints so I don't know how they typically adjust to new settings. Are they supposed to be this shy?

I've always kept large clean up crews. I'd rather have too many and have to feed a little extra than too few and have nitrate issues. Plus, snails die, hermit crabs die, crabs die all for various reasons. Course snails can also reproduce---just saw some baby astrea snails on my glass yesterday.

I'm getting more of a cleanup crew soon. These were the first things going into my tank and I just wanted to make sure a smaller group survived before I added a huge group.

Anybody know about the peppermint shrimps? I didn't have a chance to look for them this morning, but I'm hoping all 3 of them are still there. I'd rather they didn't just hide.
