accuracy of temp probe?

How do you know the temp probe on the controller is accurate?

I ask because lots of the $15-$45 thermometers you buy at the LFS aren't really accurate. Been having temp swings and trying to control it.

We calibrate our temperature probes to a NIST traceable source and they should be +- 0.5F out of the box.
