Alternating days I use skimmer?

I have a 80 gallon display tank with about 30 gallons of water in a stock tank I'm using as a sump. I just got a Euro Reef Rs 180 skimmer.

I have a mixed reef but the tank is only half full of coral. I have one clown that I feed flake once a day.

I'm really not pulling much skimmate and I wonder if I can run the skimmer every other day?

Why? Even when it's not foaming it is keeping your tank healthy raising o2, PH, ORP..

Oh yeah forgot about that. Can a tank be over skimmed? I've heard that before. Is it a myth?
