Any idea what this is? A stag or tort?

It has a very "green lantern" color. I've yet to see the polyps extend out.

Is it a staghorn of sorts? A tort? (What's the difference between the two anyway?)

A "staghorn" is the general growth formation of a colony that produces growth like "antlers". There are many different descriptors used, as well those for corralites.

growth forms can include: encrustings, arborescent, Coliminar, laminar, Explanate, etc.... (my memory isn't that good I am quoting from JEN Vernon's "Corals of the World" and suggest this source for further clarification and confusion).

Within the genus Acropora lies like 200 different species, one of these species is Acropora Tortuosa (Tort). They can morph due to enviromental and flow factors......and can be hard to determine especially when frags.

Sorry, I am going to pass on guessing what this is right now.....a little too small......but a Tort tends to be considered a Staghorn.
 
Does a tort typically not have as much of an antler, open structure as a true, mature staghorn would?
 
The definition is very broad, and subjective.....its a 20' or 20mph type of classification, then you start getting into the 5-10 species it "could" be....then chase your tail with morphology, and limited sample set, poor representation (picture quality), etc......

If your really interested, get the books I mentioned above. I believe the others I am thinking of, but the names and authors escape me right now are listed in that same thread.

Its hard to explain, but after a while....after you have seen enough in person....looked at the books enough and start to notice the details......you start to narrow in on what is is or isn't......to a degree.
