Best top coat for a stained oak cabinet?

I'm staining, possibly dying an oak cabinet. How should I seal it to best protect against salt damage?

spar varnish, hard as a rock water proof, and uv resistant. got mine at dunn edwards in a green can.

Coincidentally, that's where my stain is being mixed. I'll check it out when I go back today.

if you do spar stir the heck out of it it gets goopy on the bottom.
