Big Tank Aquascaping Question

I am thinking of reaquascaping my 290. I have noticed the tanks I have been drawn to of late, like ChingChai's tank, don't have all the caves and but have more vertical rock structures. It appears as long as fish have the ability to swim away from a tankmate and put some distance between each other it should be ok. The question is do fish really needs caves to hide in?

I think the requirement is simpler than that. It's not a question of caves per sé, but to be able to duck into an unlit place, so cracks and crevices and overhangs are what is needed.
