Anyone know the name of the program that allows you to take the original background and turn it black?

Nope. However, this can be done in a fair amount of programs such as photoshop.

Wrong choice of words on my end. I should have asked which programs allow you to do this.

Photoshop for sure. However you can accomplish this in camera using flash with a small enough fstop that only the foreground will be lighted.
