Excess nutrients leads to an increase in the zooxanthellae population inside of the coral. The zooxanthellae is a golden brown, which causes the coral to appear brown.

Usually, in a tank with very low nutrients and adequate light (specifically of a higher kelvin bulb) the coral will change into a more appealing color such as green, blue, purple, etc.
