Carbon and Ozone

From what I have read, carbon is exhausted within hours when used to clarify water. However, I have also read that when using ozone carbon is used at the output of the ozone reactor to adsorb any lingering ozone before the water is returned to the sump or tank.
People here on RC have mentioned that "they change this carbon every month or so".

If carbon is exhausted in hours when adsorbing dissolved organic solids then how can adsorb or neutralize ozone for a month or so?
 
Several possibilities, not the least of which is that carbon in a high ozone environment may not actually bind much organic material as the organics keeps getting oxidized by the ozone and released.

I'm doing a bunch of ozone experiments over the next few months, and one part of that is a test of what the carbon actually does in terms of reducing ozone, bromate, etc.
