Did you notice that if you run it at 250mA the colour is rather yellowish (under 5000K) but as you in crease mA, the Kelvin increase also?

Which Cree LED are you looking at specifically?

The published color temperature for a specific model (for Cree at least) is a range over which individual bins are specified. They don't intend that spec to mean that any given LED from that model line will operate over the entire range. LEDs are binned under specified conditions to operate at a single point in that range, and then they specify (in a separate chart in the datasheet) a typical variation from that specified color over varying operating conditions.

In the end, IMHO, this has very little impact on our aquariums, since for most of us, one of the main reasons why we dim is to change the "look" of the color in the tank.
