Cycling irregularities

Our 150g reef tank at work is cycling.

We added water, sand, and rock on Thursday Nov 23rd.

Water was fresh pre-mix donated by Discount Aquarium

Sand was Arag Alive Fiji Pink donated by CaribSea

Rock was 120lbs of Life Rock, pre-seeded with bacteria, donated by CaribSea

40lbs of dry rock donated by Reef Rocks, pre-cycled for four weeks in a 25g brute with 10 lbs of live rock.

On Monday 10/27 I dosed Ammonium Chloride up to 3-4ppm
Tuesday 10/28 Ammonia at 2ppm
Wednesday 10/29 Ammonia at 1ppm
Thursday 10/30 Ammonia at 1ppm
Friday 10/31 Ammonia at .5ppm

Monday 11/3 Ammonia at 0ppm
Monday 11/3 Nitrate at 5ppm
Tuesday 7am over fed with doc eco eggs refigerated roe
Tuesday 1:30pm Ammonia at 0ppm
Tuesday 1:35pm Nitrate at 0ppm
I have never tested positive for Nitrite, I ran the test every day.... it is 0ppm every time on the API nitrite test kit.

I threw in three snails and 1 small hermit crab, they are cruising along eating the beginning of our algae bloom (diatoms and green hair algae).

Questions...
Due to the cycled rock, live sand, and life rock, are we just seeing expedited results?

Did the nitrite possibly form over the weekend and get processed by nitrobacter (and friends), or was their sufficient bacteria to process the nitrite already in the pre-cycled rocks?

If I purposefully overdosed food this morning, how quickly should that present itself as ammonia, if it will at all?
