So it looks like my high nitrites seems to have come down to zero and I think it had to do with seachem stability. However just like everyone had said my nitrates would be high. And they do seem to be. I'm reading roughly between 40ppm Api or 80 - 100 ppm on Salifert. Should I do a water
Change or will this also come down on its own?
 
Assuming ammonia and nitrites are zero it looks like your cycle is complete.

I would do a small water change and then continue to add a source of ammonia to the tank for about a week. Monitor ammonia, nitrite, and nitrate levels to see how the tank processes the ammonia source. If ammonia and nitrite continue be zero I'd say its safe to slowly start adding fish.

Water changes are one of the easiest ways to reduce nitrates
