DSB and water flow

I'm confused about something in DSB. DSB are supposed to have water flow yet they are supposed to be a anaerobic environment. Wouldn't water flow bring O2 into the environment, contradicting the purpose of a DSB?

The reason I ask is because I was thinking of creating a DSB in my tank, but rather than having it just in my tank, I would have it in small water bottle containers inside my tank (they would be hidden by rock). The bottles would have thier tops off, so they would be exposed, yet the sides would be closed off so as to create a anaerobic environment.

The reason I want bottles is so I can remove in case onf nutrient over load 3-4 years down the line. It would allow for easy nonharmful removal.

Would this work?
 
If they have much water flow, it is slow enough to keep the O2 from being too high for the low O2 processes to take place. I do not know how well the bottle issue will work, as the flow may be too low, and few organisms will live in it.
