Is it unusual for a Fungia to take longer than a day or two to settle in & show some polyp expansion? I'm a little bit worried about my new orange one. Its been over 48 hours, but since I'm new to ownership of this Genus/family of corals I don't know if I'm being overly concerned.

Have you tested your water? I have an orange one and a green one. My orange wasn't in too good of shape when I got it, but within 2 days it was ready to eat. If it were me, I would test the water, if the water is good, then I would try and target feed it. The easiest way to get the tenacles to come out is to use a turkey baster. I usually use frozen mysis,brine shrimp,plankton,squid, or whatever I have on hand at the time. Mine like bigger pieces. When you thaw out the food in tank water, I will suck up a little of the juice and squirt it on the disc, then wait a little bit for the tenacles to come out, then sqirt the food on them gently so the tenacles can catch the food. Make sure your fish, and shrimps don't try and rob the disc's food. Disc's are kinda slow eaters so I generally babysit them until the food is gone. I aslo generally just go ahead and feed the other fish at the same time so everyone is happy and the disc is less likely to be robbed. HTH, good luck.
 
Interestingly, I did my routine water change yesterday, & in the evening, it had a little bit of tentacles out. Also, some tonight. I do need to test the water, but I'm relaxing a bit about it. I'll find my turkey baster though in a bit...
It was hard to tell what condition it was in, all the Fungias in the LFS tank were retracted. BTW, its an orange with a bit of green specimen. Wonder if its a trait?

I got one about two months ago, it was next to a blasto( not evan close to touching) and the thing started to melt to I moved away and it came back and lokks great. Then I put a ricordia next to it and it did the samething. Make sure it is by it self.
 
I am quite aware of their power, I have been for some time. I'm just going to keep an eye on it, it it starts to move towards any coral. You can read about their aggression & its effects in "Aquarium Corals" by Boremann.
