They don't need any special lighting, but the lights/colors in your tank may influence their color. As for species, an easy one to find would probably be an N. Wennerae... it seems like everyone who orders from TBS gets at least one. I believe G. smithii and G. Ternatensis (sp?) also stay pretty small

Neo-Fight, you beat me to it lol. But you forgot a good one that you can find easy G.chigara (sp?) great mantis stays under 4'' and comes out alot not a hider.
 
So far, not one person has been able to tell me an on-line site that lists any mantises other than peacock mantises (which should be in a 20g, and need at least a 30g when full grown). I'm a little curious as to whether I would get a peacock or a ciliata if I ordered from www.saltwaterfish.com, as they list it as a green mantis. If you would like a few sites to get a peacock, I can help.

If you want other kinds, ask your LFS or lurk on reef and newbie pages. When someone that is geographically close to you asks how to get rid of a mantis... you help them out and take away your prize (two of mine were free this way).
