My wife hates the, in her words, "crap" that collects on my sand bed. She wants to see the pristine white sand.. how do you keep yours clean without destroying the benefits of a sand bed?

Not really sure about which ones and there requirements but there are sand sifting gobies that will keep the sand pure white. You could add a remote sand bed if you wanted to keep the benifits.
I have a lot of the large tonga nassarius(sp?) snails which turn it over very well. But that only helps the surface, from the sides it develops discolored layers.
