how long before polyps come out?

After acclimation how long does it take and should they be out all the time? fully expanded?

It's really highly variable from tank to tank and for different types of Acros(I assume you are talking about Acros, most other "sps" would be the same). When the coral feels "comfortable" is usually when polyps come out IME and that's a good sign the coral is starting to settle in to it's new environment. There are a few tanks out there that never seem to have good polyp extension and the corals seem to do fine healthwise. In my tanks some corals that haven't been stressed too severely will extend their polyps within a day or so, most within minutes or hours.

Adding to what Chris said - it also depends on the type of acro. An ORA "CHIPS" will have insane polyp extension while a deepwater acro may be barely noticable. Really depends on many factors.
 
Actually I have had acros with full polyp extension when 1st put in the tank for a few days then stop extending when the lights are on . During the night they extend again. Im always bewildered regarding polyp extension. I think the fish in your tank have alot to do with it also.
