how much clean up crew for a 75 gallon?

Initially it is best to start light and add to the crew as the need increases, if you start with a full crew you initially need to feed the clean up crew because there will not be enough algae and detritus for them to eat. I would start with three Nassarius Snails and a mix of about 15-20 Asterea, Trocus, Cerith, Nerite snails. If you want Hermit Crabs start with maybe 4.

do not buy any packages from vendors as they recommend too much in the package. I agree with thegrun, to start out light or what I did was look at the recommended packages offered by online vendors and cut that in half.

To many mouths not enough food. Then members of your clean up crew die and decay in your tank.

If you want a reference, I have a 65 gallon and this is my crew:
1 skunk cleaner shrimp
1 blood red fire shrimp
1 peppermint shrimp
about a dozen hermits (i recommend only getting scarlett)
about 10 mexican turbo snails
5 or so trochus (but my blue leg hermits murder them)
5 or so nerites (same)
20-30 dwarf ceriths
3 large nessarius snails
6 of the smaller nessarius snails
And I would say the best "cleaners" are the shrimp, the turbos, and the nessarius snails (for the sand bed). Dwarf ceriths reproduce in the tank. So you'll end up with lots of them, if you want tiny snails all over the place.
But I started with much less. One shrimp, the hermits, and some snails. I gradually added more as my tank matured.

For that size tank I would probably go with 7-10 Trochus snails and maybe 3-5 Scarlet Hermit crabs. Use something like a Mag-Float to keep the glass clean and either stir up or vacuum your sand bed on a regular basis. Piece of cake.
If your husbandry is up to par eventually all this nuisance algae will go away and you probably won't even need a CUC to keep the tank spotless. You'll be eying things like Urchins to cut down on all the Coralline algae.
