Most people recommend 1.5-2lbs of rock per gallon. More the beter though IMO, as long as you have enough room for your fish to move. Sand someone else is going to have to chime in on that.

I use around a pound of LR per gallon of stated tank capacity myself (note here- a 55 gallon holds more like 48 gallons of water in reality but I'd use 55 lbs of LR). For a 4" aragonite bed in a 55 gallon (approx 48" x 12" footprint) around 120 lbs should do it.
