How much noise do these things make?

It depends on the type of mantis (spearer/smasher), size, when food is available, et cetera. Any one specific?

They can make a crack that can be heard across the house. Maybe not heard through walls and such, but if you have a line of site on the tank or the room the tank sits in you will hear it.
Its kind of like someone knocking on the door. Its not a loud sound even when you are right on top of it (I keep one of my Mantis tanks rught next to my Lazy-Boy), but it travels well.

Mine will occasionally get loud when remodeling, or eating crustaceans. I have ben woken up by my little 2" wenne, which gets suprisingly loud , and i have heard my peacock that is in my hallway with my bedroom door closed, all the way in my bathroom with that door closed too! Especiailly if they are smackin pvc, or acrylic, but rock is loud too...
