PVC pipe with and end cap and some food then stick another end cap on it to trap him. Or you can do as I have had to do before with my snowflake. Let it bite you then grab it to transfer him/her.

I have the scar to prove it. 2 foot snowflake eel = seven stitches and a scared for life thumb, but it worked.

I even acclimated him to the new tank before I went to the doctor.
