So the main tank is a 75 with a gallon tank sump with chambers. I am trying to get together a list of parts I need to go get from home depot, so I am trying to figure out what the best way to run the pipe is. Valves, etc etc. This skimmer will be a in-sump model so I would love to know how people do this or a good how to link. Thanks so much.

did you really mean 1 gallon sump???
Definitely use flexible pipe (either vinyl tubing or flex spa PVC) for at least part of every run. Include a ball valve in each return line. Include a PVC compression union for any line that doesn't have an insert fitting with vinul tubing.
If you can feed overflow water directly to the skimmer, it will make a big difference in skimmer performance. (My output has doubled since I replumbed...) To do that you may need to use a tee or wye fitting and another valve to divert part of the flow to the skimmer.
