Those timers are also available in a 15 minute version-commonly used with bathroom vent fans. Also in 30', 60', 120', 12h, 16h. Most of these durations are available at Lowes, HD, and OSH.
You can connect them so something will be off for a period of time, or on for a period of time.
But they may not be SPDT. They are normally open and are closed by the turning the knob. when the time is up the contacts reopen turning off what ever device it was running. The SPDT timer has a normally closed circuit as well, so when you turn the knob it opens the circuit until the selected time lapses. Two hours was the shortest time I could find in a SPDT configuration.
