Is it ok to keep live rock in non RODI water for a day or two in a pinch? no fish just the rock.

If the rock is live you need saltwater or you kill all the beneficial organisms.

I know that but is it ok if i store it in saltwater that is not RODI for a day or two or will that have lasting impact when I put it back in my tank?

I've done it with just RO water and it worked out for me. Didn't start using DI until tank was established. I didn't notice any negative effects. I imagine it depends on your water quality though. If you're on well water I wouldn't. If municipal water their water tests should be public and tell you more about the water quality.
