I picked up one of these guys at my LFS the guy said they are reef safe, its an oliva sayana snail and I have read they prey on small mollusks and bivalves, Does that mean my mexican red leg hermits are gonna get eaten?

Probably not, but that's no guarantee. They will scavenge as well as kill other snails. I don't know if they will kill crustaceans, but I know they'll eat dead ones.

I'd let it be and feed it something meaty occasionally. Then again, I'd rather have an Olive snail than most of the other stuff it might eat.
